just read about what was written on this subject and wanted to add to this. Put some lemon juice in your eggs i do this for fresh and carton eggs as i make eggs everyday for 200+ people stays good on the buffet line and never goes green!!!! i even put this into my scrambles ie: meat lover etc.. also if u want parchement on bottom of pan helps drying or a saran wrap hammock keeps them even moister. hope this helps.
