I've made 50 tarragon/chicken salad sandwiches early in the day. Then I placed them on two huge platters== on THOROUGHLY wrung out/damp paper towels and placed another damp towel on top. Then I wrapped the sandwiches thoroughly with SaranWrap. Then, I refrigerated them. They were well set and perfectly fresh for the evening's event. The trick for keeping any bread fresh is the damp towels. Hope this helps.
