When I make chicken skewers, I use boneless, skinless thigh meat. Ten pounds will make about 53 6" (of meat)skewers. I would use 40 pounds for 100 people. I also use Very, Very Teriyaki (it's a sauce from the grocery store)squirted on them from a squeeze bottle as well as a 3 way mix of salt, fresh ground pepper and garlic granules sprinkled from a salt shaker.
You could go with pulled pork for the buns instead of steak.
I would get 125 buns for the pulled pork.
I would make up 2 18" round trays of vegetables, heaped up high.
I would recommend a different salad than Cesaer since it has to be made up just before serving. I have included a recipe that has been the best received salad I have found so far.
Broccoli salad
5 Granny smith apple peeled, cored and chopped soaked in water and lemon juice
(5)12 oz packages of bacon cooked crisp, drained well and crumbled
2-1/2 cup black raisins
2-1/2 cup slivered almonds
10 stalks green onion minced
5 lbs broccoli florets (I buy (2) 3 pound bags from Costco and use 1.5 bags
Place above ingredients into full foil chafing pan.
In a large mixing bowl combine and mix well:
5 cup Best Foods Mayonnaise
1-1/4 cup white sugar
15 Tablespoons apple cider vinegar
Keep the dressing in a separate container until ready to mix in.
You will want to mix the dressing in about 2 hours before serving for the best outcome. Keep refrigerated. This will make 1 full size foil chafing pan. I would make up 1-1/2 full pans of this and also 1-1/2 full pans of Potato salad. I would make up 1 full pan of the greek salad.
