Be sure to plan on at least one of those make ahead breakfssdt carreroles you just have to throw in the oven. I have also pre-made pancakes the day before and served them with a hot blueberry syrup (syrup plus frozen blueberries)in the morning.
THink about casual casseroles you can pre-make (chili & stews)and some kind of do it yourself meals like soft tacos (all you need to do is warm the tacos and let guests choose there fillings & topings).
