Tough call with 3 protein choices but if it was me I would allow 2 pieces of fried chicken per person and allow oz of sausage. I'd use small dinner rolls for the pulled pork and serve with tangy coleslaw. We buy pork shoulder blade roasts (bone in) for our pulled pork(average wieght 10 lbs which will yield about 5 lbs) so do two. We dry rub ours and let sit overnight in the fridge. Put in roasting pan double wrapped with foil and bake at 250 for 6 to 8 hours until moist and tender virtually falling apart.
