I'm not sure how many gallons of this that you would need for 100 people. Hopefully someone can help you out with that. This has been done successfully using roaster ovens. You can add baked chicken to this.
This makes 1 gallon of Alfredo sauce.
Olive Garden Alfredo Sauce
1 T garlic puree browned
1 lb butter stirred until melted
2 quarts heavy whipping cream
8 oz milk
1 lb parmesan cheese
4 oz Fontina cheese
1 t salt
2 t black pepper
Stir on medium high heat until thickens. Turn off heat and continue to stir.
