3 Salads Potato , Fruit Ambrosia, Italian Brocoli

Please check the proportions for the salad. Using the buffet amounts for 200 guests , 1/2 pound salad per guest, 100 lbs of salad . Potato a favorite and heaviest ... 40lbs , the Easy Ambrosia Salad that serves 120 and the Italian Broccoli Pasta Salad recipe that serves 100 (6 lb pasta).
There will also be 3, 16 inch fruit platters and 3, 16 inch vegetable platters.
These would complitment cold roast beef, ham, turkey with deli rolls, and condiments.
