I know that when I use 10 lbs. of boneless, skinless chicken thighs I get about 55 skewers with about 6 inches of chicken pieces on them. I would buy 20 lbs of chicken so that there will be 2+ chicken skewers pp. I don't know how much for the other skewers though. Hopefully someone else can advise you.
A sauce I recommend is Very Very Teriyaki. It has the sesame seeds already in it. I also sprinkle a mixture of equal parts: salt, pepper, garlic granules on each side of the chicken. I get raves with this.
