If your mac & cheese is the main dish, use the standard serving size of 2oz of dry pasta/person (=18.75lbs) if it's a side dish, I use 12 lbs dry pasta and still have some leftover. Bake the mac & cheese in three 4"-full steam table or disposable pans, each pan should serve about 50. If you want creamy style, make a good white sauce and use plenty of cheese (combo gives best flavor). If you want the drier custard type, use eggs in the mix. There are recipes for both types on this site (Serves 100:Main Dishes)
