Here's how I make it for 150 college kids in a home-type kitchen. (I make 3 - 4inch full pans).
A day to two ahead, cook pasta, drain and chill with ice. Drain well, oil lightly, refrigerate. On serving day, make cheese sauce to your liking, drain pasta again and pour on cheese sauce. Mix well, sprinkle with buttered crumbs if desired, bake till hot, and nicely browned.
