Thanks, Annette. You -- along with the guys at Christian Chef's Fellowship -- have really helped.
I found that chicken stew with peanuts (or groundnuts as they call them) is a common meal in parts of Africa. I plan to take a chicken breast and rubbing it with salt, pepper, curry and garlic. After grilling them, I'll prepare a sauce that's akin to the sauce for the stew (with aromatics, chicken stock, peanut butter, soy sauce, a bit a sesame oil and hot pepper sauce).
I like your ideas. I may incorporate a few of them. I do plan to make a Jolof-style rice pilaf as you suggested.
