Hi Gordo.
I hesitate to give you advice because I feel you have experience. (Perhaps I have you confused with someone else?)
But if I were in your shoes, and also didn't know what else was being served, I would bring something that was cinnamon for those who have nut allergies, something that was cinnamon and nuts, and something that had fruit. I cannot think of a good recipe for if many guest were diabetic, but would look online if I expected that to happen, if I were in your shoes. Honestly, I would just pick a recipe I found good and moist and adapt it to the different options. Fruit will only make it more moist. Frosting will make it more sweet.
Some people would just pick up something at Krogers.
If you have time, try a couple recipes and bring them to your work for input before serving them at the brunch.
I fully expect that whatever you bring will be appreciated.
