Well the typical taco bar things--grated cheese, refried or pinto beans in sauce and/or black beans, lots of lettuce, chips, salsa (several kinds if you want--traditional, mango or other fruit, various levels of heat), chopped tomatoes, guacamole, sour cream, even a couple of kinds of meat -- taco meat, shredded chicken, soft and hard shells. there's really plenty there to make a fine meal--either salad or actual tacos, side of beans. If you don't like rice, don't make it. Corn muffins would be fine and could be made ahead, but probably not necessary with the chips and shells. Could probably do some kind of black bean/corn salad if you want. Raw veggies are always appreciated, at least by adults. And the desserts sound great.
