I have served fruit for Grad 3 times now. I have never had a problem with it turning, but I don't include bananas either.
You can put a large bowl of ice under the fruit bowl to keep it chilled if the weather is warm. But usually it is being refilled every half hour or so with fresh fruit direct from teh fridge, so it's just fine.
