Hi,
Propane would be your best bet as it would probably be the best at keeping the temp. up to what it should be 350-360 deg. You will have to order big tanks of propane. You will also need to rent refrigeration. A big job ahead of you. You can either do cans of pop or contact coke or pepsi, one of them will be sponsoring the event and arrange for a pop machine. Ask the co ordinator how the tents are ususally set up, water supplies etc.
Yes, you will go through a lot of oil and if you are making 'cakes' you will need to filter the crumbs out of the oil and clean the fryers each evening or morning or the bottoms will fill up with crumbs and burn and make things taste burnt.
Hopefully you've cooked on this scale before. Lots of lists and organization. Goodluck!
Better book the fryers and equipment as soon as possible!
