I want to do egg casseroles (stratas) for the church breakfast instead of scrambled eggs. I was thinking of offering two choices, Egg & Cheese, and Sausage, Egg & Cheese with bread in the bottom. Using 9 x 13 pans, would I figure about 8 servings each? Or, could I figure 10 each, expecting some people will either take more, or one of each. What do you think?
Also, if I make them in (disposable) aluminum lasagna pans instead, how do I increase the recipe, and how many would that serve?
