Graduation Tea Party - Help

I am planning a Graduation Tea Party in June. Help!
Number of guests invited: about 70
MENU: I'm thinking of dainty sandwiches; tea; punch. (The "tea sandwich" page on this web site is very helpful.)
Question 1: Freezing: can I freeze ahead? If yes, can I make the sandwiches a month in advance?
Question 2: Tea -- How do I serve brewed tea for 70?
Question 3: Punch -- Does anybody have a recipe for Pimm's Punch for this size of group?
