I agree with Sue. Yu must create at leat one double sided line and two would be better.
I recommend you separate the ticket sales from the food service area. Are you selling beer by the glass or pitcher?

: i always find that the lines move quickly, if
: people can go down both sides of a table
: if that is not possible.......and another
: station so that you can serve more people at
: one time
: good luck with your event!

: Our supporters club does a huge tailgate
: before each home game (Major League Soccer
: team). On average we serve about 300. Right
: now the food service set up is basically a
: rectangle of tables set up under a 10x20
: tent around the perimeter (people are the
: inside to refresh). At one end people check
: in (you have to pay and get a ticket to
: eat), get a plate/utensils and continue
: around to the sides, desserts and then the
: grilled entrees are at the back (the grills
: are a few feet away so we have to walk
: through people to replenish, this is not
: ideal).
:
: We usually get a big crush around 2 hrs
: before game time so we're getting another
: grill to keep up with demand but we're
: looking for better ways to keep people
: moving and not standing in a long line (also
: a problem at our beer tent, we have 8 kegs
: and try using pitchers to move things
: along). Open to all suggestions for better
: set up.
