Our supporters club does a huge tailgate before each home game (Major League Soccer team). On average we serve about 300. Right now the food service set up is basically a rectangle of tables set up under a 10x20 tent around the perimeter (people are the inside to refresh). At one end people check in (you have to pay and get a ticket to eat), get a plate/utensils and continue around to the sides, desserts and then the grilled entrees are at the back (the grills are a few feet away so we have to walk through people to replenish, this is not ideal).
We usually get a big crush around 2 hrs before game time so we're getting another grill to keep up with demand but we're looking for better ways to keep people moving and not standing in a long line (also a problem at our beer tent, we have 8 kegs and try using pitchers to move things along). Open to all suggestions for better set up.
