Hi there. I am planning a class dinner serving Mexican food for around 300 people. I won't be able to make it the day of the dinner. I need to make it ahead of time and have it easy to assemble or reheat by another person. Can I make make it, freeze it in small portions and then on the day of the dinner have the other person put it into a roaster to reheat? Or, can I make brown the rice and freeze, and have the other person assemble the ingredients in a roaster?
