When in a restaurant business and your help is there anyway and your menu is constant you can figure in food cost in relation to your labor as a cost budgeting forecast. However in a situation like yours often serving shrimp cocktails and crab cakes (high food cost & low labor)to 50 people is a whole lot easier than serving spaghetti with home made meatballs (low food cost & high Labor) that's why I stick with a consistent labor rate regardless of what's being served. I always ask for the cost of food up front, balance due prior to the serving (dependant on relationship to client)
