My company has James Coney Island come out once or twice a year for their employees. The serve the hot dogs with chili, cheese, mustard, onions, etc.
But they also have chips. Standard potato chips and fritos for frito pies. That seems easy, yet enough.
When they do this, they also have Marble Slab ice cream come out. So perhaps you could serve ice cream or have a sundae bar if you want to add something.
I think that coney dog parties aren't supposed to be "healthy" or vegetarian friendly, so chips would work just fine.
