There's a handy breakfast casserole recipe at this site http://www.recipeusa.org/crowd.htm scroll down to #17 Breakfast Casserole. They use a combo of meats, but you could use just one type for the total amount. I'd like to know how it works out, I'm scheduled to make a B'fast Casseole for 150 in Dec. but had planned to make the one with bread rather than potatoes. Good luck.
