I just did this when a group wanted "nice" desserts and all I had was cans of vanilla pudding
I mixed in at the last minute about 3-4 bananas for each can then served with 'nilla wafers. You could also do the same but put on a layer of whole 'nilla wafers in a hotel pan.
For the chocolate I would try folding in some whip topping and pour over a layer of crushed graham crackers. I never tried this with the chocolate, if you do it let me know how it turned out.
