The swap to a V-8 is quite easy since the early mustang was made on a falcon frame. Use 65 to 66 mustang motor mounts and radiator. Related parts such as hoses etc. are the same. Early mustang parts are available and cheap. You want to replace the rear end as the falcon one is very weak and prone to problems. You can use a maverick 8" rear end...either 5 bolt or 4 bolt. I prefer to use the 5 bolt. Can also use the granada or mercury monarch rear end. Use mustang spring plates and ubolts. The granada 8.78 rear end is nearly bullet proof and is a bolt in. 2.47:1 highway gears. Expect anywhere from 18 to 26 mpg with a V-8 conversion and only about 70 extra pounds unless you use aluminum heads, manifold and headers in which case the entire car will only weigh about 2800 lbs or less.
