This year I'm trying to grow shallots in my garden. I don't know whether I've ever even eaten a shallot and I've certainly never cooked with one. To me they're just mysterious, very pricey onion-y things I see in the grocery store. But I've read that they're used by gourmet cooks.
Can any of you tell me how to use them to best advantage, to bring out their flavor? They're labor intensive to grow, so I don't just want to randomly throw them into the chili or spaghetti sauce or something. I want to use them in a way that they'll really be delicious (assuming they succeed in my garden).
