The basil I have to replant every year, but the others, I just cut really low and pile pine straw on top and they last through the winter. I've had my tarragon and oregano plants for 10 years or more! When they start to go to seed, I cut them and tie them up, leave them upside down till dried out. Hubby made me a large screen so I just crunch the herbs up to get rid of the stems and bottle them up for friends. No way to use it all up in a year!
