I'm not sure what role the marshmallows played in the recipe---whether for texture or sweetness or what. Does it call for a lot of them? Any chance of just leaving them out? Could you try some of that prune puree (I can't recall the brand name of it)? It's pretty good in baked things and helps hold moisture. Plus it's healthy.
My fruitcake recipe calls for a lot of candied fruit. I skip that and use extra raisins, dates, currants, dried apricots, prunes, etc. instead. And lots of fresh nuts. It's still really good and more guilt-free.
