....the best and most authentic feta cheese is made from sheeps milk. This is the kind that I grew up with. I would accompany my mom to the Greek grocery stores and she would pick whatever type she wanted out of big vats where the cheese sat in brine, soft, hard, etc. The variations were what part of Greece the feta came from,or Bulgaria. But it was all sheep cheese, occasionaly you will see a French variety mixed with goat milk.To me, a Greek, feta made with cow's milk is an abomination! The best feta, in my opinion is called Dodonis Feta, found only in international markets.
