Hi Kelly! Yaaay, so glad you're off Coumadin and can eat healthy green stuff. I love greens! Yes, I juice, too, mostly in winter. My most common juice is basically carrot juice (maybe a pound or two of carrots), with a stalk or two or celery, a handful of parsley, an apple or two for sweetness, and about a 1/2 inch chunk of fresh ginger root. To me, the ginger is the key to making the flavor have some zip. If you want to improve the taste, you can also add some orange juice to it, or some agave nectar.
What things have you started juicing? Do you have the kind of juicer that keeps the pulp in the juice, or the kind that ejects the pulp? (Mine is an Omega and it ejects the pulp. Sometimes I spoon a little of the carrot pulp back into the finished juice.)
How do you prepare your kale? I saw a recipe in the newspaper where you rip it in small pieces and then knead the heck out of it until it's wilty. Then add the same ingredients as for Caesar salad. It was surprisingly good.
