Mmmm, Patti, that squash sounds delicious! The cinnamon is a good idea. Yum. I wonder how pumpkin pie spice would taste on them.
Have you tried leeks? We slice them crosswise onto salads and the little white rings look beautiful. The taste is like a green onion. They're the #1 breast-cancer fighting veggie.
Does your family like beets? You could try baking some---they have a very different taste and texture when baked. Use small young beets or cut the bigger ones into quarters (the size isn't important; it just affects how long they have to bake). Put in an oven-proof bowl and toss with a bit of oil to coat them thoroughly. Then bake, covered, until tender. (Maybe 45 minutes at 350, depending on size.) I usually bake beets and carrots together. They get very sweet and they don't 'bleed' so much like boiled beets.
