Great article, Cheryl. Since I read the China Study by T. Colin Campbell, I've eliminated almost all dairy products from my diet. His enormous study presented very compelling evidence that milk consumption increases the risk of cancer. I don't believe it's normal to be consuming the hormones that are in milk. On rare occasions, I use a little organic milk to make some cornbread or something. Because I don't drink much of it, I buy the small containers of Horizon organic milk that don't require refrigeration until opened. Or I buy non-instant powdered organic milk and mix it a little at a time as needed for a recipe.
The American diet is packed with cheese. It's everywhere, especially in fast food. They mound heaps of it on burgers, pizza, Mexican foods and sub sandwiches. When my husband and I eat out, we order it without cheese, or just a very small amount of cheese or we scrape a lot of it off.
