Yes, you can change more than one character into a sage. You need to turn whatever character you want to be a sage into a jester at level 20, then when they are a level 20 jester, the sage option will appear at the bottom of the class change list for that character. And no, you can't change the sex of a character once they've been created. Your only option is to create new characters with different names if they're not the main character, or if they're the main character, to start a new game.
