It's always good when the vet can find a physical cause. Not because it's good to have the dog sick, of course! But because then it gives you something that can be fixed.
Don't know the answer on the calf poo, but anytime anyone - animal or human - has food sensitivities, its' always worthwhile to begin eliminating potential problem "foods" from the diet - one at a time when possible - to see if the symptoms go away. In this way, you can often identify the "culprit".
