"Drop it" training is important because the day will come that your dog has grabbed something valuable or - even worse - something that could be harmful - and you need your dog to be willing to relinquish items to you.
For "Drop it" training, you want to begin with food TRADES and always trade UP - i.e. give the dog something of a GREATER value than what you're asking him to relinquish. Then - as he becomes reliable, you can begin to mix it up (sometimes give him items of greater value, sometimes items of lesser value, sometimes give back what you asked him to relinquish, occasionally give him nothing at all, but ALWAYS lots of praise for a good "Drop it").
I can see how if there is no trade-up that a dog who's already protective could become even MORE protective of his food.
