Variation Meat Loaf using Corn
Step One One Pound of Ground Beef One Pound of Ground Turkey (Put this into large Mixing bowl and let sit while prepping the rest) Step Two Crack two eggs into mixing bowl Pour about 1/4 cup of broth (Chicken, beef or veggie) Pour about 1/4 cup of Tomato Sauce Using a wire whisk, mix it well. Sprinkle 2 teaspoons of unflavored Gelatin powder on this and let it sit. Step Three Using a food processor chop as small as you can the following -> One small onion -> One Jalapeno -> Drain a can of corn and process it to almost a paste Step Four Drizzle a little olive oil on the meat and using your (gloved) hands or a mixing spoon - gently mix the meat. The Oil will help. Add the Veggie mix Pour in the Egg Gelatin mix Add 1 Cup of fine Bread Crumbs or fine Saltine Cracker crumbs. Pour Rest of Can of Tomato Sauce over this and stir it up with the wooden spoon or gloved hands. Note You may need to add additional bread crumbs. The mixture should not be runny. Step Five Spoon into Loaf pan and use as a mold. Tip upside down on Cookie Sheet lined with Aluminum Foil (Spray non stick spray or veggie oil on it to prevent sticking) Tap the bottom to release the loaf. (2 pounds of meat should make 2 loaves - one for supper, the rest for lunches during the week) Cook in preheated oven for one hour at 375. Step Six Glaze Tomato Sauce and some BBQ Sauce Step Seven Remove Meat Loaf from oven and using a brush or spatula - spread that glaze mix on top and all four sides of the loaf. Put back in the oven for 5 to 10 minutes. Remove, and let the loaf sit for 5 minutes before cutting.
