Looking for Elizabeth

Elizabeth Cowling was baptised at Lamerton on 12 April 1836, daughter of John (miner) and Mary of North Brentor. In 1841 the family was living at The Toll House, Brentor. |
Between 1842/49 both her parents and two siblings died, leaving her the sole survivor of the family. In his will John named his sister, Jane Pashbee, as his executrix and Elizabeth as his sole beneficiary.
In 1851 Elizabeth is recorded as living to in Fore Street, Stoke Damerel with her "sister", Joanna, aged 23. Joanna is actually her aunt, born in 1822. Elizabeth acted as a witness to Joanna's marriage in August 1857 when Joanna was living in Mount Street. I can find no further trace of Elizabeth after this date. I have cross checked marriage and death references from BMD in Devon as thoroughly as I am able.
It is possible that Elizabeth took a leaf out of Joanna's book. In May 1857 Joanna gave birth to son,fathered by William Bourke. On his birth certificate Joanna is identified as Joanna Bourke formerly Cowling. When she married in August 1857 she described herself as Joanna Bourke, widow. There is no record of her marriage to William Bourke, or a recognisable record of his death.
In 1861 Jane Pashbee, then Jane Gill, was a live-in housekeeper for a Catholic priest in Somerset.
Any help in determining Elizabeth's destiny will much appreciated.
