If you use the new Index on the GRO site you can see age of deaths and mother's maiden name for births, there are details about the index on the site. You have to create an account and log in to use the site but it's free to use.
The Elizabeth Buckland whose death registration is shown on the GRO Index Jan Feb March Qtr 1841 St Thomas Union Vol 10 Page 171 was aged 65. As the 1841 census was taken on the night of the 6th June 1841 therefore it is possible that this death registration is for your Elizabeth.
Findmypast shows an Elizabeth Buckland aged 65 being buried in January 1841 at Clyst St Mary. You can view an image of the entry in the Parish Burial Register on Findmypast
I can't fully answer your other question regards Burial Book as I don't know exactly what records you are looking at. If you are looking at an actual entry in a Parish Register for a burial prior to 1812/3 then most of the time it will just give you a name and date of burial, on some occasions Vicar's recorded more information in the register but this is not always the case. The same would apply to baptism entries prior to 1812/13. The date of baptism and child's name would be shown with very often the father's name or the name of both parents. You do also sometimes get a date of birth and other information given on a baptism entry prior to 1812/13 but this is not always the case.
Transcriptions are useful finding aids but you would still need to look at the actual entry in the Parish Register to check if additional information to that shown on the transcription is given and that the transcription is correct.
A Parish Burial Register would not show details of a baptism. Many Parish Registers prior to 1812/1813 are Composite Registers where all baptisms, burials and marriages are shown in the one Register.

If you are researching ancestors in Devon then most parish records are on Findmypast, not all are indexed on the site but there is the facility to browse images of the registers. There are also over 50 parish registers with images in Devon FHS Members' Area, available to members of the Society only. Some records are available on FamilySearch including images of Bishop Transcripts for Devon, again many of these you would have to browse as not all indexed on the site.
I don't know where you are located or if you have a subscription to Findmypast. If you have not used Findmypast previously then you can take out a 14 day free trial but make sure you untick auto renew in your account if you do this. Findmypast is also free to use in all LDS Centres and many Libraries/Archives around the UK & World
