I have killed my fair share of Encephs by under-watering! As long as your soil mix is well-drained (and if your plants are still in the soil-less mix from A&A it is very well-drained), you could water them every day and it wouldn't hurt them. But only once a week in such hot summer weather is not healthy. Under-watering makes them weak and less able to fight off infections and infestations that would not normally damage a healthy plant.
