Yes, it will just dry up. You can cut it off any time you want, even before it dries up if you wish. Usually, the sago about this time wants to produce more leaves and the cone keeps it from doing that, so many times, people who need the plant to flush earlier, will cut the cone off as soon as it gets full size and you can see the penduncle.(which is the little skinny stem that holds up the cone)Many times you will get new leaves about a month earlier by doing this. Unless you want the pollen for something, there is no reason to keep the cone. For that matter, the pollen is somewhat poisonous and you don't want to be breathing that stuff in anyway.
