Cutting down the main plant will not grow any more smaller plants in the middle. all you will get are more babies (offsets) around the perimeter of the base, which come from the leafbases. The offsets can be removed from the main plant and rooted. At some point in time, you will not want a big cluster of offsets in the same location because it will turn into a big mess. I gree with the others, cutting down the main plants would be a shame. My suggestion would be to remove the plants intact and plant them in another location where they wouldn't be in the way. At the same time, before you plant them in the new location, remove the offsets and when rooted in, place a couple on the spots you have them now.
