transplanting to ground

I have 2 large (from soil height is 40") that I am preparing to transplant from pots to ground. Anything I need to do to the root system before planting? Also do you have any suggestions before we do this? Soil to use? Will they take the full Texas sun? It gets over 100 degrees here. Thanks for your help.
