Cutting all the leaves off at one time, or having all your leaves burnt off will make your plant slightly weakened because it is not taking in sun to produce energy, until the new leaves are produced. Usually, the plant can live off the starch in the stem until new leaves are produced, and many times, new leaves will be produced faster if you did cut off old leaves. I tell people to wait until new leaves are produced before you cut off old leaves that look bad, but it is up to each person to decide what they want to do.
