Help with Seeds, Sago

I've two sagos' with seeds and need to know how to tell when it is time to pull the seeds out. I thought you were suppose to wait until December but I've read conflicting information. Please tell me how to know when to pick the seeds. I'm doing this for a school project and don't want to get it wrong.(I know this takes a long time)
