I just read Trent Loos article in the new digest. It is a great article that we all should read! One item that I might point out, he states in the article that pork consumption in the 60s was 51 # per year and it has hovered around 46 since 1976. Maybe, just maybe pork is not "The other White Meat" In a time when the health experts hail the healtyness chicken raised in deplorable conditions, (in my opinion!)and a glut of white meat why have we tried to compete with a low quality, low price meat when pork is clearly the best alternative to expensive beef?
