She should be safe to eat. Pigs have their spines broken quit often during electric stunning, especially if the guy doing the stunning isn't changing the charge for smaller pigs.
However I doubt she will taste very good since she was under a very high level of stress when she died and 2.) you didn't get her bled out right away.
