i actually got hte persimmon idea from my CSA's website. they said fuyu persimmons are good hard or soft, and don't make you pucker and they recommend slicing thin and putting on a salad becuase they don't soak up dressing the way apples do. they stay crisper.
they also recommended doing sliced beets to make it colorful but i haven't cooked my beets yet ![]()
