re carrot pudding. perhaps this will do.
11/2 cups seedless raisins or sultanans (soak for 1 hour in)
1/2 cup dark rum.
3 tablespoons unsalted butter, melted.
11/2 cups sugar
2 cups grated carrot
11/2 cups all purpose flour
3/4 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon nutmeg (or allspice)
1/2 teaspoon cinnamon
3 eggs. well beaten
1/2 teaspoon cloves (optional)
11/2 cups walnuts (optional)
