This is a simple but very good one
1 cup corn syrup or similar syrup
1/4 cup water
2 tablespoons butter
1 teaspoon vanilla essence
1 teaspoons baking soda
11/2 - 2 cups of salted peanuts.
Cook on MEDIUM heat, stirring constantly to avoid sticking and burning.
Cook to 295 ( cracking consistancy).(best to wear protective gloves to avoid splashes)
Removed from heat and stir in baking soda and vanilla.
Working quickly tip out on to a greased flat baking tray and spread thinly with a spatula.
Leave to get cold then break into bite sized pieces.
