This one might be of use.SFINCI
1 cup (2 sticks)unsalted butter
2 cups water
2 cups flour
8 eggs
good amount of oil for deep fat frying
1/2 - 1 teaspoon cinnamon
1/4 cup water
caster sugar for sprinkling
Bring to boil and add flour
Stirring constantly until mix is smooth and leaves side of pan clean.
Remove from heat, put mix in a bowl
Add eggs one at a time. Mix each one thoroughly before adding another.
Leave to cool.
Put oil in deep pan and heat until very hot 375o.
Take a tablespoon of the mix and gently put in hot oil.
Fry until golden brown and hollow.
Drain off excess oil and place puff on a warm plate (keep it warm)
When nearly all balls are cooked
Put honey,and cinnamon in a saucepan and bring to boil.
Keep it warm until all puffs are on the plate
Pour the honey mix over and then sprinkle with fine (caster)sugar.
